-Heat ghee, add cumin seeds, Hing, minced garlic & chopped ginger
-Sauté it for 20 seconds
-Add in green chillies, all veggies and salt
-Cook till all veggies are barely tender (cover it with a lid)
-Add in masalas, mix it and cook for a minute
-Add in tomatoes and tomato puree
-Cover and cook for two minutes
-Now add in Kasuri methi and sliced paneer
-Mix until the paneer is well coated with masalas
-Cook covered for two minutes on medium heat
-Cook again without lid for a minute
-Garnish with Coriander
